Socrate Safo Raises Food Safety Concerns After Comparing How Two Loaves of Bread Age

Filmmaker and public commentator Socrate Safo has called for increased vigilance over food safety standards in Ghana’s baking industry after making an observation about how two different loaves of bread aged under similar conditions.
In a Facebook post, Socrate Safo stressed that bread is one of Ghana’s most consumed staple foods, making it essential for every bakery to prioritize consumer health and safety above profit.
According to him, millions of Ghanaian families depend on bread for breakfast, school meals, and quick snacks. For that reason, he believes every baker has a responsibility to ensure products meet approved food safety standards.
He noted that concerns have occasionally been raised about the possible misuse of preservatives and other chemicals in bread production. While acknowledging the role of the Food and Drugs Authority (FDA) in regulating the industry, he emphasized that only approved preservatives should be used and strictly within the limits permitted by law.
A Personal Observation
Socrate Safo recounted buying two loaves of bread from different bakery. He said both loaves were stored under similar conditions for several days.
According to him, one bread developed mold after about five days, while the other loaf remained unchanged over the same period.
The experience prompted him to ask why one loaf appeared to age naturally while the other did not.
Only proper scientific testing can determine whether a product complies with food safety standards,” he noted, adding that experiences like his demonstrate the importance of regular inspections and laboratory analysis.
Commending the FDA
Socrate Safo praised the Food and Drugs Authority for its continued surveillance of food products on the Ghanaian market.
He encouraged the Authority to strengthen routine inspections and laboratory testing to ensure all bread sold in Ghana complies with national food safety regulations and maintains public confidence.
Advice to Consumers and Bakers
Socrate Safo urged consumers to buy bread from reputable bakeries, pay attention to product freshness, and report any concerns about food safety to the relevant authorities.
He also appealed to bakers across Ghana to uphold integrity by maintaining high standards of hygiene, quality, and safety rather than taking shortcuts that could put consumers’ health at risk.
According to him, every loaf of bread produced becomes part of a family’s daily meal, making food safety a responsibility that should never be compromised.
